Slow Cooker Tuscan White Beans

This is an extremely versatile bean dish. I have served this as a main meal over brown rice with lots of veggie sides and as a side dish to grilled meats. The leftovers are perfect for using in Wild Rice and White Bean Stuffed Tomatoes (see The Whole Meal for the recipe). The mashed garlic really adds unique flavor (as well as being great for cardiovascular and immune health).

Slow Cooker It’s-Just-Like-Chipotle’s-Spicy-Barbacoa

Chipotle is about the only fast food that I will eat because the meats and dairy are hormone-free, they try to use as much fresh organic local produce as possible, and it tastes so good! The spicy barbacoa beef is my favorite and is perfect for cooking in a slow cooker. I searched the internet for ideas of how to recreate Chipotle’s fantastic shredded beef and ended up with this version that is pretty outstanding. Mission accomplished!

Slow Cooker Fajitas

Fajitas were originally made with skirt steak, hence, the name fajita coming from faja or “belt”. Texas ranch hands have been making them since the 1930s and the dish’s popularity is still evident in every Mexican or Tex Mex restaurant in the U.S. Skirt steak is tough and typically marinated overnight for tenderness prior to grilling, but the slow cooker automatically takes care of transforming the meat to a tender, flavorful base for this meal.

Slow Cooker Tacos

I am almost embarrassed to include this; it’s so easy, it’s shameful! This is my have-one-second-to put-a-meal-in-the-slow-cooker dinners. Not only can I make the taco meat in a split second and forget it all day, but everyone loves making and eating tacos! It’s such a fun meal to eat with others.

Slow Cooker Salsa Verde Turkey Chili

This is a riff on the ever popular chicken chili that is perfect potluck for early fall football games, but try making this in your slow cooker in the spring or summer with a dollop of cool sour cream or Greek yogurt for a tantalizing trip to Mexico without the expense of a plane ticket.

The use of turkey thighs results in a soon-to-be-favorite change to your standard chicken chili recipe.

Slow Cooker Sweet Soy Braised Chicken Thighs

I am always testing Asian-inspired chicken recipes in the slow cooker but had yet to find one that stood out. I am a big fan of the podcast The Splendid Table with Lynn Rosetta-Casper. She also has great cookbooks and this recipe is adapted from a slow roasted chicken recipe found in her cookbook, The Splendid Table’s How to Eat Supper. It is very family-friendly receiving two thumbs up from my girls and I think the secret is taking some of the liquid and reducing it in a skillet as the sauce to be served with the chicken. I typically serve this with jasmine rice and steamed bok choy.

Slow Cooker Chicken Burrito Rice Bowl

The Green Lemon in south Tampa has crave worthy rice bowls that inspired me to make this slow cooker version that was a huge hit with my family. This is one of those easy, add everything to the slow cooker and walk away for most of the day recipes. We could all use a no brainer at dinner time for our most harried days!
