Butternut Squash Soup with Barley

Serve with sautéed brussels sprouts, whole grain rolls.

I am new to experimenting with winter squash soups. I had this mental barrier that they took too long to make and/or would be cumbersome to prepare. Imagine my surprise when I put together this highly nutritious, warming meal together in under 45 minutes. I am now a squash soup convert!

Tofu Steaks with Mushrooms and Vegetables

My youngest is a tofu-a-holic and second only to miso soup, this is one of her favorite ways to eat the protein-packed bean curds. I love it because it comes together fast and other than making a pot of rice, all the ingredients are prepared in one skillet. This is my adaptation of a popular Cooking Light recipe, substituting regular mushrooms for shiitake but for a more authentic Asian verison, try the shiitake or even oyster mushrooms.

Vegetarian Chalupa Bowl

I adapted this south-central Mexican specialty from a pork-based slow cooker recipe to a quick vegetarian version. While I have made the original version (and it is quite tasty!), I find the beans-only version light, refreshing, and crave-worthy. It is well suited for an appetite adjusting to warmer days and our bodies needing light fare.

This is one of my family’s staples during the warmer months of the year. My kids especially like the build-it-yourself component of this meal, allowing for customization to one’s own taste (and as we know is sometimes the key with kids!).

Indian-Spiced Kale and Sweet Potato Soup

I created this soup when I was on a mini detox where I mainly consumed fruit and veggies. Whether you need a healing soup for detox purposes or not you’ll want to make this warming soup in the cooler months and it is highly adaptable. For the vegans, just add in some beans and for the carnivores try venison, chicken or pork sausage.

Cuban Black Beans and Rice

Served with Columbia Restaurant’s 1905 salad-

When I first moved to Tampa, Florida, I had never heard of black beans, let alone tasted them. A staple of Cuban food, black beans are very versatile and used almost everyday. Now I eat them on a regular basis, and this is my version of Moros Y Cristianos (Moors and Christians), by far my family’s favorite recipe for this humble bean.

The name of this dish refers to the wars between the Moors (blacks) and the Spaniards (whites). It is a reminder of the Spanish influence on Cuba.

The Columbia is a famous Spanish restaurant in Tampa. It is known for its flamingo dancers and authentic Spanish/Cuban cuisine; the 1905 salad being one of its specialties. This is my vegetarian version, as I have omitted the meat and changed out the iceberg to butter lettuces.

Green Smoothies

This is my favorite way to get a lot of raw fruits and vegetables in my girls’ diet first thing in the morning. There are so many great things about green smoothies beyond the obvious health benefits: fast, easy, adaptable, portable; to name a few.

The “green” refers to adding vegetable greens, such as spinach, kale or romaine lettuce, into a fruit smoothie but if you leave out dark fruit the greens create a vibrant green colored smoothie which most kids find fun especially if you give it a fun name(Kermit’s Smoothie perhaps?).

This is my kids’ favorite version, which includes raspberries (optional in the recipe below if you want a bright green colored smoothie); dark fruit is an easy way to “hide” the spinach (worked wonders for me for years with my youngest. Now she does not care, as the great taste factor overruled the idea of spinach in her smoothies).

Slow Cooker Lentils

Although I usually think of lentils for fall or winter, this slow cooker version is also warm weather friendly, especially topped with cooling yogurt. I developed this when one morning I looked in my pantry for something to put in my slow cooker and found a bag of brown lentils. Bingo!
