Goi Ga (Vietnamese Chicken and Cabbage Salad)

This fresh, crisp salad comes together quickly as the chicken is already cooked and tossed with raw vegetables in a tangy lime-based dressing. The classic Vietnamese chicken salad makes a filling lunch or light dinner, especially welcome during the warmer months of the year. This is a staple go-to recipe in my house.

Chicken Chopped Salad

Serve with whole grain baguette and herbed goat cheese-

I found a great tutorial in a Better Homes and Garden magazine on making a great chopped salad. Mashing the garlic in salt and letting it sit while you prep the vegetables is the key to a creamy, tangy dressing that set the flavor for the salad. I had fun modifying a classic chopped green salad into a main dish version my family loves (and it’s a great way to sneak a lot of vegetables in too!).

Chicken Sausage and Mixed Greens Soup with Quinoa

This was an impromptu meal that I put together with leftover sautéed mixed greens, grilled sausage, and cooked quinoa. It was so flavorful and satisfied everyone that I had to include it in The Whole Meal’s repertoire of recipes for fall, winter, and early spring. It’s great on its own, but a warm loaf of French bread and some good quality chunks of cheese would be the perfect complement.

Slow Cooker French Provencal Chicken

This is a simple, easy, French-inspired chicken dish that will make you feel like you are in the French countryside, but your slow cooker did all the work! I love to serve this with a simple side of sautéed or steamed green beans and roasted new potatoes. Bon Apetit!

Slow Cooker Parmesan Chicken

I had intended to make oven-baked parmesan chicken one night, but realized that I would be out all day, returning with limited time to make this classic Italian dish. I experimented with my slow cooker and the result was surprisingly good! How nice to come home to a favorite Italian meal, where all I needed to do was boil some pasta and toss together a quick green salad.

Chicken, Apple, Bacon Spinach Salad With Maple Dressing

Serve with whole grain rolls-

Apples are an abundant and delicious fruit readily available during the fall. They come in so many varieties you could spend the entire season trying them all! Most of us like to eat them raw, stewed, or baked into a pie, but their versatility extends well beyond the obvious uses making their way into savory, dinner dishes. I think this fall salad may inspire you to incorporate apples into your everyday cooking!

Slow Cooker Creamy Chicken and Wild Rice Soup

I have never made a creamy chicken soup at home, but have ordered creamy soups in the heart of fall or the dead of winter when you just want to take the chill out of your bones. I actually first tested this on the first of October in 90 degree weather, but we cranked the a/c and my family rather enjoyed this fall/winter must-make soup, going back for seconds.
