Oven-BBQ’d Chicken

While I was grateful for being able to camp out in my parent’s luxury high-rise for the summer while we were trying to sell our house, the drawback is no grill!! By Week 3 and lack luster results with a George Forman grill, I decided to try a barbequed chicken recipe in the oven. This meal is perfect for the transitional month of September when corn and blueberries are still in season and you might have abandoned your summer grilling, but not your summer attitude.

Chicken and Sausage Gumbo

Gumbo is probably the most traditional Creole food, and once fall rolls around, heavy pots are pulled out for this cold weather favorite. Most gumbo recipes call for chicken pieces or a whole chicken, a roux that take a long time, and the gumbo takes hours to simmer. I was determined to create an equally delicious version that could be made in 60 minutes or less. Considering my family went back for second and thirds, I would say this version fits the bill!

Almond Chicken

Serve with Jasmine rice-

This is my husband’s favorite dish to order when we go to a Chinese restaurant. Like Chop Suey, it is a specialty of the early American Chinese restaurants most likely out of New York’s Chinatown. Regardless of its origins, this at home version will become a family favorite as it is in my house.

Apple Walnut Curried Chicken Salad

Serve in lettuce cup with seasonal fruit and whole grain rolls-

My transition between the gym and early school pick up usually finds me at Rolling Oats Market so I can heal my muscles with this protein-rich chicken salad. This curried version is one of my favorites from this local natural market. I’ve recreated it at home so that I can enjoy any time of the week. I have suggested scooping the salad into a large Bibb lettuce leaf but feel free to stuff it into pita bread or sandwiched between two slices of bread.

Butter Chicken Masala

Serve with basmati rice and peas

One of my culinary highlights of 2013 was learning how to cook Indian food from my friends Taru Raman and Nirmala Kakkuppi hosted in the kitchen of my friend, Susan Hawkins. It was a fun afternoon filled with friendship, knowledge, and incredibly fragrant and visually delightful cuisine. As a newbie to Indian cooking, I feel honored to have learned from women who confidently prepare their traditional dishes commonly thought to be intimidating my most westerners. They broke this myth as I now prepare Indian food with confidence too (well, the recipes that they taught me).

The original recipe is vegetarian, “Paneer Butter Masala” (paneer is a type of Indian cheese), but I have replaced the paneer with chicken. You can find “Butter Chicken” on many Indian restaurant menus, but I was told this preparation is the real thing. You are in for a treat because either version, paneer or chicken, is amazing and surely to become a family favorite. For the vegetarian paneer butter masala recipe, see Suggestions below.

Some of the spices you may not have and if you do not plan on making more Indian dishes, try to find a market that sells spices in bulk so you can purchase only what you need. Garam masala and dried fenugreek leaves (kasoori Methi) can be found at Indian markets and more gourmet supermarkets.

Grilled Chicken Nacho Salad

My friend, Pat A., inspired me to create this recipe after she served us a white bean nacho appetizer she cooked on the grill for our girl’s night. I was intrigued with the idea of grilling a plate of nachos and boy were they good! I have made it a little healthier with homemade tortilla chips and more substantial with the addition of rotisserie chicken and homemade guacamole. Eating it as a salad gets a green side on the plate and it’s fun to eat!
