Bacon and Cheddar Cheese Quiche

Serve with chopped walnut, pear and arugula salad with honey white balsamic vinaigrette-

This was a surprise hit as egg pies or quiches do not necessarily elicit much excitement unless you are in your local coffee shop looking for something healthier than scones to go with your just-perked java.
My youngest loved it so much she asked if she could have it for breakfast the next day. Because this is such an easy recipe to make with most of the time invested in waiting for it to bake, we whipped up another quiche, baked it, and cooled it all before her bedtime. My oldest daughter, who typically does not care for eggs, loved it, but was especially keen on the chopped walnut, pear and arugula salad, going back for seconds. The whole meal is a keeper!

Beef Kefta Flatbread Pizza

Serve with Tomato-Cucumber Salad-

I was flipping through a Cooking Light magazine and came across Beef Kefta Patties with Cucumber Salad. Kefta? A quick internet search yielded my answer: Kefta is the Lebanese/Syrian dialect for Kofta- a Middle Eastern, South Asian and Balkan meatball or meatloaf, although it is also referred to as kefka in Morocco. In the Middle East Kefta is ground beef or lamb, typically mixed with cumin, paprika, minced onion, coriander and parsley. Cinnamon, hot ground pepper, and mint leaves are optional.

The recipe below shows traditional quantities of these spices and herbs. I have, however, sautéed the kefta mixture in favor of forming into kebobs and made it as the base for a flatbread pizza. In honor of its Lebanese roots, serve it with a cooling cucumber-tomato salad.

Pear and Golden Raisin Ginger Chutney

I adapted this warm, savory-sweet chutney from a Southern Living recipe as part of the 4th course of The Mystic Meals Under the Moon October Full Hunter Moon Dinner. I paired it with a creamy brie, although a mild nutty cheddar works well too. Consider using this chutney during the holidays as a condiment to a roast pork or turkey. It’s a keeper!

Wild Rice and Sweet Corn Balls with Roasted Red Pepper-Walnut Dip

These nutty-sweet wild rice-sweet corn balls with a hint of heat are the perfect compliment to the smoky red pepper-walnut dip. It’s a match made-in-heaven appetizer sure to illicit oohs and ahhs at your next potluck get together. I even like this pairing as a vegan lunch or dinner; just add a side of greens or a crisp salad.

Spicy Roasted Pecans and Walnuts

By March I am ready for lighter eating and for me this translates to a detox that is heavy on plant-based whole foods. My protein loving body still needs that satiation which has me reaching for nuts mid-afternoon. It was an early March nut craving when raw almonds just did’t sound so appealing that led me to whip up these addictive, peppery dry roasted nuts. You’ll want to portion control these as you could practically eat the whole batch in one sitting!

Curried Thai Beef Lettuce Wraps

Who doesn’t love scooping up a flavorful filling into an edible wrapper? My family loves this Asian-inspired dish on a busy week night. I updated an old Cooking Light recipe as a fresh alternative to ground beef and rice. A side of juicy, sweet mango slices is all it needs to compliment the slight spiciness.

Grilled Chicken Nacho Salad

My friend, Pat A., inspired me to create this recipe after she served us a white bean nacho appetizer she cooked on the grill for our girl’s night. I was intrigued with the idea of grilling a plate of nachos and boy were they good! I have made it a little healthier with homemade tortilla chips and more substantial with the addition of rotisserie chicken and homemade guacamole. Eating it as a salad gets a green side on the plate and it’s fun to eat!

Grilled Barbequed Chicken and Pineapple Pizza

Serve with Romaine Salad with Quick and Easy Vinaigrette-

With the warm weather here to stay and not a mosquito in sight, I love to grill pizza on the outside grill. Grilling the crust adds a nice smokiness, and tastes as decadent as fast food but it’s really good whole foods eating!

We love this version- a bit more gourmet for the adults, but kid-friendly enough that they’ll ask for another slice, or two.
