Vietnamese Bun Bo Xao (Beef with Rice Noodle Salad)

Serve with sliced mangoes-

Noodles are one of the two main staples in daily Vietnamese meals (rice being the other) with rice noodles more prevalent than wheat. A cool noodle salad, or bun, is one of the most traditional ways of eating rice noodles in Vietnam. It is an amazingly intricate dance of tastes, textures, and temperature. Although you will most likely find bun made with quickly cooked pork at any of the many bun stands in Saigon, my favorite way to order it is with sirloin beef. Here is my version, which earned 5 stars at my dinner table. Make this on a hot summer night with a side of sweet mango slices.

Slow Cooker Sweet Soy Braised Chicken Thighs

I am always testing Asian-inspired chicken recipes in the slow cooker but had yet to find one that stood out. I am a big fan of the podcast The Splendid Table with Lynn Rosetta-Casper. She also has great cookbooks and this recipe is adapted from a slow roasted chicken recipe found in her cookbook, The Splendid Table’s How to Eat Supper. It is very family-friendly receiving two thumbs up from my girls and I think the secret is taking some of the liquid and reducing it in a skillet as the sauce to be served with the chicken. I typically serve this with jasmine rice and steamed bok choy.

Grilled Chimichurri Pork Chops

I usually serve chimichurri as a condiment but I saw pork chops marinated in this classic Argentinean condiment at the Fresh Market meat counter and thought what a great way to jazz up plain pork chops. This is an easy, flavorful warm weather meal when paired with a south-of-the-border side dish.
