Slow Cooker Fajitas

Fajitas were originally made with skirt steak, hence, the name fajita coming from faja or “belt”. Texas ranch hands have been making them since the 1930s and the dish’s popularity is still evident in every Mexican or Tex Mex restaurant in the U.S. Skirt steak is tough and typically marinated overnight for tenderness prior to grilling, but the slow cooker automatically takes care of transforming the meat to a tender, flavorful base for this meal.

Slow Cooker Tacos

I am almost embarrassed to include this; it’s so easy, it’s shameful! This is my have-one-second-to put-a-meal-in-the-slow-cooker dinners. Not only can I make the taco meat in a split second and forget it all day, but everyone loves making and eating tacos! It’s such a fun meal to eat with others.

Grilled Pork Kabobs with Spicy Peach BBQ Sauce

Served with grilled bok choy and steamed rice-

This is such a nice change from typical barbeque due to the Asian influence but no less delicious for your summertime eating. Take advantage of in-season juicy peaches and summer’s grilling to wow family and friends with this delicious, unique kabob meal.

Grilled Chimichurri Pork Chops

Serve with Cilantro Lime Rice

I usually serve chimichurri as a condiment but I saw pork chops marinated in this classic Argentinean condiment at the Fresh Market meat counter and thought what a great way to jazz up plain pork chops. This is an easy, flavorful warm weather meal when paired with a south-of-the-border side dish.

Hoisin Glazed Pork Tenderloin

Serve with fennel and red cabbage slaw, brown rice-

This really flavorful and moist grilled pork is one of my favorite summer grilling recipes, especially for an impromptu outdoor get together when you are sick of burgers, dogs and chicken. I have it paired with a fantastic fennel-red cabbage slaw, which came from my friend and The Whole Meal tester Leslee’s repertoire of easy and really fresh sides. Rice is an easy accompaniment, but potatoes salad or even grilled corn are just as delish.

Slow Cooker Butternut Squash Barley Risotto

This vegetarian slow cooker recipe, adapted from a Good Housekeeping recipe, offers a hearty meatless meal (both economical and a chance to eat low on the food chain) that also incorporates an alternative whole grain, barley, in an unexpected way. Both nourishing and versatile, this risotto is great on its own […]

Slower Cooker Beef Stew

Fall and winter are synonymous with stews and a beef stew is a classic crock pot meal. The long, slow cooking period allows for the stewing beef to become tender. This is my version which my family loves. It includes tomato sauce and cabbage which boosts the antioxidants in a very […]
