The fall-inspired, earthy salad was created as the 1st course in The Mystic Meals Under The Moon’s October Full Hunter Moon Dinner and Celebratory Moon Ritual event. One of my favorite vinaigrettes tempers the peppery arugula and highlights the sweetness of the grapes.

Nutella Banana Bread Muffins

A bunch of really ripe bananas led me to create this easy muffin recipe that tastes just like banana bread with a creamy chocolate surprise in the center. Fall Salad with Creamy Pumpkin Balsamic Vinaigrette

While I love the fresh greens and pears that are in season this time of year, the amazing salad dressing is the star of this recipe. It is spiced with one of our favorite fall seasonings-pumpkin pie spice. Tossed with some toasted pumpkin seeds and pecans, mixed greens, some blue cheese and sweet crunchy pears, this salad will wow not only your family but anyone that is lucky enough to taste it.

Wild Rice and Sweet Corn Balls with Roasted Red Pepper-Walnut Dip

These nutty-sweet wild rice-sweet corn balls with a hint of heat are the perfect compliment to the smoky red pepper-walnut dip. It’s a match made-in-heaven appetizer sure to illicit oohs and ahhs at your next potluck get together. I even like this pairing as a vegan lunch or dinner; just add a side of greens or a crisp salad.

Spicy Roasted Pecans and Walnuts

By March I am ready for lighter eating and for me this translates to a detox that is heavy on plant-based whole foods. My protein loving body still needs that satiation which has me reaching for nuts mid-afternoon. It was an early March nut craving when raw almonds just did’t sound so appealing that led me to whip up these addictive, peppery dry roasted nuts. You’ll want to portion control these as you could practically eat the whole batch in one sitting!

Almond Chicken

Serve with Jasmine rice-

This is my husband’s favorite dish to order when we go to a Chinese restaurant. Like Chop Suey, it is a specialty of the early American Chinese restaurants most likely out of New York’s Chinatown. Regardless of its origins, this at home version will become a family favorite as it is in my house.

Apple Walnut Curried Chicken Salad

Serve in lettuce cup with seasonal fruit and whole grain rolls-

My transition between the gym and early school pick up usually finds me at Rolling Oats Market so I can heal my muscles with this protein-rich chicken salad. This curried version is one of my favorites from this local natural market. I’ve recreated it at home so that I can enjoy any time of the week. I have suggested scooping the salad into a large Bibb lettuce leaf but feel free to stuff it into pita bread or sandwiched between two slices of bread.

Chicken Strawberry Spinach Salad

Serve with whole grain baguette with goat cheese-

This is one of those “out of necessity” dinners that I made when my kitchen was being renovated and I did not have a stove or oven. I couldn’t even access my grill which was right behind the staging area for the workers. It was spring and I knew I wanted to incorporate the juicy, sweet strawberries at their peak this time of year. I got carried away and used them in the salad dressing as well as in the salad. What a great experiment! It’s the strawberry version of the popular raspberry vinaigrette, so expect this salad to be on the sweet side.

Sweet and Salty Nutter Balls

My husband likes Lara Bar’s Uber bars and one day he brought home a box of “Roasted Nut Rolls”. I liked the name so I flipped to the ingredients and decided I wanted to make a simple version at home. These were a huge hit with my gym friends (great for both pre- and post-workout) as well as a sweet treat, snack or quick, grab-and-go breakfast for my family.
