Edamame and Summer Corn Quinoa Salad

This light and fresh deli-style salad that I originally bought from Stater Bro. Market in Joshua Tree sustained me for a couple days whether before a hike in Joshua Tree National Park or as a light snack on one of our many car rides during our southern California summer vacation.

I know this salad will become a permanent addition to your summer rotation of favorite, go-to recipes.

Pineapple-Cilantro Margarita Protein Smoothie

I took a break one afternoon from having my nose in my laptop and desperately needing to recharge. Fueled myself with this incredibly refeshing, super yummy and uber healthy protein smoothie. It was the last week of Jazz Fest and I was daydreaming about the last time I was at this timeless music fest. Almost as memorable was finding El Gato Negro and their Pineapple-Cilantro Margarita. This is my smoothie verison and you’ll never miss the tequila (well, if it is before 5pm!).

Mexican Margarita Cookies

I adapted The Whole Meal’s popular and healthy raw Cinnamon Raisin Cookies for my friend, Kari L., for her Cinco De Mayo get together as she wanted to highlight fresh Mexican as well as healthier, in-theme desserts. This was a hit in testing with both kids and adults as it has just the right balance of sweet and salty with a punch of lime.

Hoppin’ John

Serve with braised collard greens-

“Eat poor that day, eat rich the rest of the year. Rice for riches and peas for peace”. This is a southern saying on eating a dish of Hoppin’ John on New Year’s Day to ensure a prosperous year filled with luck.

This is my quick, vegetarian version (the original Hoppin’ John calls for dried black eyed peas soaked overnight and a ham hock). While I like to make this on New Year’s Day (we all want prosperity and luck for our families, right?), it is also a great dish that I prepare almost year round.

Chocolate Cranberry Truffles

I was looking for a whole foods alternative to the highly processed “energy” bars (more like crash and burn) so favored by my daughter, who is a swimmer. Upon experimenting with different dried fruits, this was the final version that won her approval, as well as her teammates and friends. Nuts provide a bit of protein, dates and cranberries are a natural sweetener, and coconut adds good fat. I usually add some unsweetened cocoa powder and semi sweet chocolate chips for the chocoholic in all of us! It’s a no cook (all you need is a food processor) snack, treat, dessert your family will love. Once you get a hang of the basic recipe, you’ll enjoy making variations on the basic nut and date base.

Indian-Spiced Kale and Sweet Potato Soup

I created this soup when I was on a mini detox where I mainly consumed fruit and veggies. Whether you need a healing soup for detox purposes or not you’ll want to make this warming soup in the cooler months and it is highly adaptable. For the vegans, just add in some beans and for the carnivores try venison, chicken or pork sausage.

Tricolor Quinoa-Sweet Potato Stuffing

I created this delicious, gluten-free stuffing for the Mystic Meals Under the Moon’s November Full Moon Dinner. I wanted the menu to honor the month’s Thanksgiving holiday but with a twist. Although it played sidekick to a roasted salmon dish, this stuffing could easily stand alone both in flavor and sustenance. Even if you don’t want to give up your traditional holiday stuffing try this amazing whole grain recipe sometime during the holiday season.
