Slow Cooker Turkey BBQ

My friend and neighbor, Nicole Rodriguez, passed this super crock pot recipe on to me over 5 years ago. Since then, it has become a favorite any time of year. I have modified the original recipe to use a little less processed sugar and eliminated the highly processed Worcestershire sauce. You won’t even miss it! Don’t be intimidated by the long list, it comes together in less than 10 minutes.

Turkey a la King

Serve with steamed rice and buttered broccoli-

My dad and I sat sipping tea the day after Thanksgiving reminiscing about Thanksgivings past and he reminded me of one of my favorite childhood meals he used to prepare, usually with leftover Thanksgiving turkey, Turkey a la King. I had forgotten all about this popular comfort food but now I was craving it.

Tired of my turkey soup and still having some leftover turkey I was ready to make it! While Pops could not quite remember how he made it, he did remember he used diced pimentos, an ingredient I remember giving the creamy concoction its distinct flavor. An internet search resulted in many versions and when I stumbled upon Campbell’s version I had a feeling this was what my dad was making (it was the 1970s!).

This is my whole foods adaptation (no canned soup in this recipe!) and it tasted just as good, maybe even better, than I remembered. Thanks Pops for helping me continue the family tradition with my kids.

Pumpkin Mousse Tarts with Cranberry-Pecan Crumble

Twitter inspiration strikes again! This time in the form of a pumpkin mousse that was the main filling for a pumpkin tiramisu recipe tweeted from Food and Wine Magazine. By the time I got around to testing the recipe my daughters had found and devoured the lady fingers needed for the recipe.

I am a big fan of bite-sized desserts and decided that the mousse could play the star role with a raw nut and dried fruit crumble as its side kick. My first test batch of 15 tarts were gone in 5 minutes! It’s creamy fall flavors wrapped in buttery phyllo topped with a crunchy sweet crumble; this is a must at my Thanksgiving dessert buffet.

Slow Cooker Split Pea Soup

I really like this version of split pea soup because it’s brothy, rather than thick like a stew. Artisan rolls or slices of bread with a pat of creamy butter are a must for dipping in the filling soup. I usually serve a simple side salad of romaine mixed with escarole (or other bitter lettuce) and shredded carrots in a mustard vinaigrette.

Beef and Cheddar Cheese Chowder

Served with green salad with maple dressing-

I threw together this soup one day when my oldest daughter was feeling run down. She loves Whole Foods Market’s version but declared my version just as good. It’s so simple to make and adding chopped spinach to an energizing protein-rich base balances hormones and boosts immunity.

Pear and Golden Raisin Ginger Chutney

I adapted this warm, savory-sweet chutney from a Southern Living recipe as part of the 4th course of The Mystic Meals Under the Moon October Full Hunter Moon Dinner. I paired it with a creamy brie, although a mild nutty cheddar works well too. Consider using this chutney during the holidays as a condiment to a roast pork or turkey. It’s a keeper!

Raw Banana Trifle

I am not much of a baker but I love to make easy, simple raw treats and desserts, which are a healthier way to satisfy that sweet tooth anyway. Here is one of my favorites that can be made year round. Raw foods tend to be dense and this recipe is no exception which means smaller portion sizes are very satisfying.

Arugula, Roasted Grape, Goat Cheese and Walnut Salad with Vanilla Vinaigrette

This may be your go-to impress salad for family and friends in the cooler months. The fall-inspired, earthy salad was created as the 1st course in The Mystic Meals Under The Moon’s October Full Hunter Moon Dinner and Celebratory Moon Ritual event. One of my favorite vinaigrettes tempers the peppery arugula and highlights the sweetness of the grapes.
