Grilled Chicken Nacho Salad

My friend, Pat A., inspired me to create this recipe after she served us a white bean nacho appetizer she cooked on the grill for our girl’s night. I was intrigued with the idea of grilling a plate of nachos and boy were they good! I have made it a little healthier with homemade tortilla chips and more substantial with the addition of rotisserie chicken and homemade guacamole. Eating it as a salad gets a green side on the plate and it’s fun to eat!

Taco Casserole

I did not “get” Twitter until I started The Whole Meal and found myself thoroughly absorbed in all things social media. Now Twitter and Instagram have been such great sources of inspiration for me; this recipe being the perfect example.

A Tweet from @MyFitnessPal with a recipe for a taco casserole had me thinking this looks yummy and easy but when I looked at the ingredients it didn’t seem very taco-ish (had black beans and corn in it) so I played around with more traditional taco ingredients and this easy casserole was born; like eating a taco without all the mess and clean up! My family loved it!

Slow Cooker Chicken Burrito Rice Bowl

The Green Lemon in south Tampa has crave worthy rice bowls that inspired me to make this slow cooker version that was a huge hit with my family. This is one of those easy, add everything to the slow cooker and walk away for most of the day recipes. We could all use a no brainer at dinner time for our most harried days!
