Nutella Banana Bread Muffins

A bunch of really ripe bananas led me to create this easy muffin recipe that tastes just like banana bread with a creamy chocolate surprise in the center. A favorite breakfast, after school snack or pre-work out , these moist, healthy muffins will have you leaving bananas laying around to ripen extra long on a regular basis.

Baked Oatmeal

This is a well loved breakfast that I have been making for my teen since she was little. She was never much of an oatmeal lover but she loves this baked version. Whether you prepare it first thing on a weekday morning or as part of your leisurely weekend brunch, this recipe will become a family favorite during the colder months of the year.

End-of-Summer Shrimp and Green Bean Salad

Serve with skillet cornbread-

For most of us, the beginning of September marks a transition to a new season, even though temperature-wise it may still feel like summer. Our kids are back in school, most of the local summer fruit and vegetables easily found at most farmer’s markets are starting to dwindle, and we start to feel more grounded. What I love most about this recipe, besides being so darn good, is that it transitions our taste buds from summer’s abundance (the green beans and basil) to fall and winter’s sustaining comfort foods (cornbread). Transition and change is a good thing!

Chocolate Chip Zucchini Bread

Something about the start of fall (even if it is 90 degrees) has me trying all kinds of quick breads. As you know I am not much of a baker and quick breads are very forgiving and easy. While banana bread is my good ‘ole standby (as I always have ripe bananas lying around), I wanted to try my hand at a gluten-free version of a popular end-of-summer, early fall favorite- zucchini bread (when we are all trying to use up the abundance of zucchini in our gardens). Two thumbs up from family and friends and they did not even miss the wheat flour or refined sugar.
