Slow Cooker Split Pea Soup

I really like this version of split pea soup because it’s brothy, rather than thick like a stew. Artisan rolls or slices of bread with a pat of creamy butter are a must for dipping in the filling soup. I usually serve a simple side salad of romaine mixed with escarole (or other bitter lettuce) and shredded carrots in a mustard vinaigrette.

This may be your go-to impress salad for family and friends in the cooler months. The fall-inspired, earthy salad was created as the 1st course in The Mystic Meals Under The Moon’s October Full Hunter Moon Dinner and Celebratory Moon Ritual event. One of my favorite vinaigrettes tempers the peppery arugula and highlights the sweetness of the grapes.

Who doesn’t love scooping up a flavorful filling into an edible wrapper? My family loves this Asian-inspired dish on a busy week night. I updated an old Cooking Light recipe as a fresh alternative to ground beef and rice. A side of juicy, sweet mango slices is all it needs to compliment the slight spiciness.

This is one of those “out of necessity” dinners that I made when my kitchen was being renovated and I did not have a stove or oven. I couldn’t even access my grill which was right behind the staging area for the workers. It was spring and I knew I wanted to incorporate the juicy, sweet strawberries at their peak this time of year. I got carried away and used them in the salad dressing as well as in the salad. What a great experiment! It’s the strawberry version of the popular raspberry vinaigrette, so expect this salad to be on the sweet side.
