Slighty sweet and slightly tangy this easy one skillet chicken dinner makes a great everyday meal or Sunday sit down. I have paired it with carrot slices simmered in ginger and honey and a side of steamed rice, but roasted sweet potatoes with a side salad or green vegetable would make great partners to this “winner winner chicken dinner”.

This is the perfect end-of-summer, transitioning to fall soup. It showcases fresh corn which is still in season in a warming yet light way, perfect for a cooler September evening. I usually pair this soup with multi-grain rolls baked in the oven and a garden salad.

Hawaiian Citrus Blackened Salmon Salad

This recipe is adapted from one of my favorite dishes at Hula Bay in Tampa, Florida. It’s crisp, fresh, and light but hefty in the good omega 3 fats naturally found in salmon. Try making this entrée salad in early spring when the citrus is as its peak and your body is just starting to awaken to the lighter eating that the new season ushers in.

Honey BBQ’d Chicken Wings

Serve with carrots and celery sticks with feta cheese dip-

I like to come up with healthier versions of fast food my family loves. I tinkered around with a baked version of wings that would be just as tasty as the fried version. It took me a few times to get the flavor and crispiness right, but this version got two thumbs up! Most of the time needed for this meal is the cook time of the wings, leaving plenty of time to prepare your crudités and even flip through a magazine.

I came up with this Creole-inspired recipe when I was gifted from my friend and neighbor, Amy B., her leftover Thanksgiving Creole brined turkey breast.
