Slow Cooker French Dipped Sandwiches

If you happen to be in Los Angeles you must make a stop into Phillipe the Original in Chinatown for the best French dipped sandwiches. While all their versions are pretty yummy (lamb, roast pork, turkey or ham) it’s their classic roast beef French dip that is iconic LA food and I had to recreate the sandwich at home for when the craving just needs to be satisfied. This is the restaurant’s classic recipe adapted for the slow cooker. Much cheaper than a plane ticket!

Turkey Stuffed Green Peppers

Serve with iceberg wedge with creamy peppercorn dressing-

I have rediscovered green peppers after a long hiatus! I think it was largely this recipe which made me fall in love with them again. While I love the traditional version of rice and beef stuffed peppers simmering in tomato sauce, I wanted something different and this beef- and grain-free version does not disappoint.

Tricolor Quinoa-Sweet Potato Stuffing

I created this delicious, gluten-free stuffing for the Mystic Meals Under the Moon’s November Full Moon Dinner. I wanted the menu to honor the month’s Thanksgiving holiday but with a twist. Although it played sidekick to a roasted salmon dish, this stuffing could easily stand alone both in flavor and sustenance. Even if you don’t want to give up your traditional holiday stuffing try this amazing whole grain recipe sometime during the holiday season.

Slow Cooker Drunken Beans (Frijoles Borrachos)

I adapted for the slow cooker a bean dish from Ivy Stark’s Dos Caminos Mexican Street Food cookbook (if you like Mexican street food this is a beautiful cookbook filled with both traditional recipes and twists on Mexican food at its best). Her version called for bacon but I have kept it vegetarian; the bacon can always be added as a condiment.
