Slow Cooker French Dipped Sandwiches

If you happen to be in Los Angeles you must make a stop into Phillipe the Original in Chinatown for the best French dipped sandwiches. While all their versions are pretty yummy (lamb, roast pork, turkey or ham) it’s their classic roast beef French dip that is iconic LA food and I had to recreate the sandwich at home for when the craving just needs to be satisfied. This is the restaurant’s classic recipe adapted for the slow cooker. Much cheaper than a plane ticket!

Roasted Salmon with Raspberry Cream Sauce

Serve with wild and brown rice, cranberry and walnut pilaf, steamed broccoli-

One of my most memorable seafood meals was prepared at the Bayshore Conch Club in Tampa (now an urban grocery store and sorely missed). I had ordered a salmon fillet enveloped in a golden pastry, but when you pierced the flaky crust, a layer of creamy brie cheese and sweetly tart raspberry sauce oozed its way off the hidden pink salmon. That sweet and savory, melt-in-your-mouth deliciousness was the inspiration for this meal. My version is significantly lighter and won’t cause you to need a nap, rather you’ll be wistful that the raspberry season is coming to an end and you’ll have to wait until next summer and fall for a repeat performance.

Tricolor Quinoa-Sweet Potato Stuffing

I created this delicious, gluten-free stuffing for the Mystic Meals Under the Moon’s November Full Moon Dinner. I wanted the menu to honor the month’s Thanksgiving holiday but with a twist. Although it played sidekick to a roasted salmon dish, this stuffing could easily stand alone both in flavor and sustenance. Even if you don’t want to give up your traditional holiday stuffing try this amazing whole grain recipe sometime during the holiday season.

Pear and Golden Raisin Ginger Chutney

I adapted this warm, savory-sweet chutney from a Southern Living recipe as part of the 4th course of The Mystic Meals Under the Moon October Full Hunter Moon Dinner. I paired it with a creamy brie, although a mild nutty cheddar works well too. Consider using this chutney during the holidays as a condiment to a roast pork or turkey. It’s a keeper!
