Poached Salmon with a Creamy Pea Sauce

Serve with Herbed Roasted Potatoes-

I have been serving this simple yet elegant salmon entree every Easter, as it is always requested and especially appreciated by the non-meat eaters. The cream sauce is light as the emphasis is on the meaty salmon and fresh seasonal spring vegetables. Include this on your Easter buffet or serve it with herbed roasted potatoes for a special springtime weeknight dinner.

Slow Cooker Parmesan Spelt and Tomato Risotto

A Food and Wine recipe for a cheesy farro and tomato risotto was the inspiration for this slow cooker version made with spelt. While the quicker cooking farro is a better choice for a creamy risotto I did not have any on hand when I first tested this so thought I would take my chance with the spelt, normally a shoo-in for grain-based salads. Loved it!

Skillet Pork Chops with Nectarines

Serve with easy sweet potatoes, steamed and buttered broccoli-

Fall is a great time to add some of the season’s best fruit, such as plum, nectarines, apples and pears into your daily meals. Just that bit of sweet is a surprising but nice twist to your everyday recipes. Take pan seared pork chops for example; tasty and juicy by themselves but elevated to a whole new level when topped with a mint and honey laced nectarine sauce. Make sure to buy the best quality chops you can afford.
