I like to have a healthy, quick meal that can be put together in under 30 minutes on those nights when we roll in after 7pm. We can still sit down as a family, get homework done, and have some downtime before its lights out for another action-packed day. This one bowl meal fits the bill, as you can use a store-bought rotisserie chicken or left over chicken from a previous meal.

Grilled Barbequed Chicken and Pineapple Pizza

Serve with Romaine Salad with Quick and Easy Vinaigrette-

With the warm weather here to stay and not a mosquito in sight, I love to grill pizza on the outside grill. Grilling the crust adds a nice smokiness, and tastes as decadent as fast food but it’s really good whole foods eating!

We love this version- a bit more gourmet for the adults, but kid-friendly enough that they’ll ask for another slice, or two.

Weeknight Spaghetti with Meat Sauce

Spaghetti with meat sauce is one of those tried and true weeknight meals that I default to when I am lazy, don’t want expensive takeout or Pb&j sandwiches, and lucky enough to have all the ingredients on hand. I am including this basic recipe in hopes that you’ll refer to it in a pinch with the notion that you do not need to buy commercially prepared jarred sauce; homemade is pretty easy, sugarless and fresh! Serve a crisp romaine or garden salad along with some Italian bread to sop up the sauce if you don’t mind the extra carbs.

Grilled Chimichurri Pork Chops

Serve with Cilantro Lime Rice

I usually serve chimichurri as a condiment but I saw pork chops marinated in this classic Argentinean condiment at the Fresh Market meat counter and thought what a great way to jazz up plain pork chops. This is an easy, flavorful warm weather meal when paired with a south-of-the-border side dish.
