Veggie Burgers

My friend and fellow tester, Sable D., requested a recipe for veggie burgers as she and her husband eat the processed frozen ones quite often. I wanted to create an easy, freezable version that she could prepare using whatever vegetable and beans were in her house. Mission accomplished!

Quinoa with Gazpacho and Red Beans

I was looking for a vegetarian recipe that showcased the most common vegetables popping up in our gardens, farmer’s markets, and CSA’s this summer, but was filling enough to satisfy any carnivore’s appetite. Between the beans and the high-protein quinoa, this recipe fits the bill and is quite tasty too! I served this to relatives this summer, and both adults and kids went back for seconds!

Sandra’s Super Addictive Hot Salsa

My friend, Sandra Botero, whips up the freshest, spiciest salsa that I regularly consume on everything from eggs and grilled meats to simple salads. She shared her recipe with me in all its freshness and simplicity. I dare you to try this and then tell me that you do not crave it. You’ll also stay sick-free, as this salsa is chockfull of immunity boosting vegetables.

Taco Casserole

I did not “get” Twitter until I started The Whole Meal and found myself thoroughly absorbed in all things social media. Now Twitter and Instagram have been such great sources of inspiration for me; this recipe being the perfect example.

A Tweet from @MyFitnessPal with a recipe for a taco casserole had me thinking this looks yummy and easy but when I looked at the ingredients it didn’t seem very taco-ish (had black beans and corn in it) so I played around with more traditional taco ingredients and this easy casserole was born; like eating a taco without all the mess and clean up! My family loved it!
