Beef Kefta Flatbread Pizza

Serve with Tomato-Cucumber Salad-

I was flipping through a Cooking Light magazine and came across Beef Kefta Patties with Cucumber Salad. Kefta? A quick internet search yielded my answer: Kefta is the Lebanese/Syrian dialect for Kofta- a Middle Eastern, South Asian and Balkan meatball or meatloaf, although it is also referred to as kefka in Morocco. In the Middle East Kefta is ground beef or lamb, typically mixed with cumin, paprika, minced onion, coriander and parsley. Cinnamon, hot ground pepper, and mint leaves are optional.

The recipe below shows traditional quantities of these spices and herbs. I have, however, sautéed the kefta mixture in favor of forming into kebobs and made it as the base for a flatbread pizza. In honor of its Lebanese roots, serve it with a cooling cucumber-tomato salad.

Slow Cooker Pork Pozole

Many Mexican dishes are perfect for the slow cooker as they require braising or roasting of meats, which adapt very well to crock pot cooking. I have yet to make this the traditional way, but if the slow cooker is any indication, this is a nice addition to your Mexican recipes. Traditionally eaten during the Christmas season, I find this soup/stew adapts easily to warm weather due to its cooling condiments. I have replaced the traditional hominy with fresh corn which makes it even more appealing in warmer weather.

Goi Ga (Vietnamese Chicken and Cabbage Salad)

This fresh, crisp salad comes together quickly as the chicken is already cooked and tossed with raw vegetables in a tangy lime-based dressing. The classic Vietnamese chicken salad makes a filling lunch or light dinner, especially welcome during the warmer months of the year. This is a staple go-to recipe in my house.

Slow Cooker Pork Chalupa Bowl

This is the slow cooker meat version of the popular Vegetarian Chalupa Bowl. For the meat eaters in the family, they’ll love it just as much. I love being able to use dried beans rather than canned. It’s Mexican cooking at its best, but all in the able hands of your slow cooker. Ole!

Slow Cooker Crab and Corn Soup

This is the perfect end-of-summer, transitioning to fall soup. It showcases fresh corn which is still in season in a warming yet light way, perfect for a cooler September evening. I usually pair this soup with multi-grain rolls baked in the oven and a garden salad.

Veggie Burgers

My friend and fellow tester, Sable D., requested a recipe for veggie burgers as she and her husband eat the processed frozen ones quite often. I wanted to create an easy, freezable version that she could prepare using whatever vegetable and beans were in her house. Mission accomplished!

Quinoa with Gazpacho and Red Beans

I was looking for a vegetarian recipe that showcased the most common vegetables popping up in our gardens, farmer’s markets, and CSA’s this summer, but was filling enough to satisfy any carnivore’s appetite. Between the beans and the high-protein quinoa, this recipe fits the bill and is quite tasty too! I served this to relatives this summer, and both adults and kids went back for seconds!

Grilled Salmon with Pineapple Salsa

Serve with coconut rice and tropical coleslaw-

A really fresh piece of Alaskan salmon needs nothing more than a good seafood dry rub and a seasonal salsa on the side. Here I have paired Creole seafood seasoning with a sweet pineapple salsa and some tropical sides for a simply grilled salmon perfect for late spring and summertime dining.

Hint O Lime Fish Tacos

Serve with black bean and corn salad-

When I travel to sunny, southern California, this is one of my favorite dishes to devour. The fresh seafood, guacamole and salsas are classic Baha cuisine, especially when sitting at an eatery on PCH (Pacific Coast Highway). Preparing this meal at home transports me back for one surfin’ safari night!

In the suggestions I have provided recipes to make salsa and guacamole from stratch- well worth the extra 10 minutes of preparation. Once all the ingredients are made, this is such a fun meal to eat, as each family member gets to make their own tacos. Crank up some Beach Boys and let the fun begin!
