Proscuitto and Melon Spinach Salad

It was love at first site and first bite with this colorful and vibrant spinach salad that I first had at Pie for the People in Joshua Tree, CA. The sweet cantaloupe chunks and salty Italian dry-cured ham are nestled next to Guinness caramelized onions and raw red onions and served in a sweet vinaigrette.

This summer salad inspires you to slow down, pull up a chair to a table under a shady tree, pop open a crisp bottle of white wine and invite a handful of your favorite people to toast the blessing of your abundant life. Yes, truly..it does!

Kale and Cruciferous Crunch Salad with Poppy Seed Dressing

Prepackaged salad greens have really come a long way from the standard mix of iceberg, romaine, radicchio and carrot shreds. You now have your choice of micro greens, blends of baby kale, baby spinach and baby romaine, and other specialty lettuce blends, but it was a bag of kale, broccoli slaw, and shredded Brussels sprouts packaged with dried cranberries, pumpkin seeds and a poppy seed dressing that inspired me to make this kick-up raw salad that pairs perfectly with your fall chilis and stews.

I did not like the rancid soybean oil dressing that came with it so I decided to create my own version. I am glad I did as this has become a much requested salad from family and friends. It’s a great way to sneak in those nutritional powerhouse cruciferous veggies that we seem to avoid. A secondary bonus is it’s all raw so we get a great boost of plant enzymes sorely lacking in our modern diets.

Turkey Kale Noodle Bowl

I am a big fan of Asian-inspired rice bowls but my noodle-loving daughters look wistfully at the Tinkyada brown rice linguine noodles hanging out next to the jar of jasmine rice. So I took pity and whipped up a Thai inspired NOODLE bowl which resulted in smiles and second helpings.

While I was grateful for being able to camp out in my parent’s luxury high-rise for the summer while we were trying to sell our house, the drawback is no grill!! By Week 3 and lack luster results with a George Forman grill, I decided to try a barbequed chicken recipe in the oven. This meal is perfect for the transitional month of September when corn and blueberries are still in season and you might have abandoned your summer grilling, but not your summer attitude.

Kung Pao Chicken

Serve with cooked Jasmine rice-

A Cooking Light recipe of Kung Pao Chicken was my original trigger to want to test an at-home version of the popular Chinese dish found at all US Chinese restaurants. When I looked at the CL version’s ingredients something seemed amiss (namely I doubted that red pepper flakes could recreate an authentic recreation) so I immediately went to Bee Yinn Lo’s website, Rasa Malaysia, my favorite Asian recipe site. I am glad I did, as I learned that Kung Pao is actually an authentic Chinese dish (and not a made-for-American-tastes recipe) and this is the authentic version.

I have followed her recipe as closely as possible, although I did not have a couple ingredients (but I used close substitutions), scaled the heat back a bit (just enough so my 10 year old would eat it) and the result is authentic, fresh and a keeper that I would like to regularly make when Chinese food cravings strike or for friends at a Chinese takeout-themed dinner party perhaps.

Thai Turkey Sliders

Serve with Asian broccoli slaw-

We could not get enough of these (even the picky eater in the family)! It’s the perfect blend of all that we love about Thai food- a little spicy ginger, a little heat from sriracha sauce, salty fish sauce and fresh herbal cilantro. These make a fun dinner or a great appetizer at your next get together.
