Turkey Stuffed Green Peppers

Serve with iceberg wedge with creamy peppercorn dressing-

I have rediscovered green peppers after a long hiatus! I think it was largely this recipe which made me fall in love with them again. While I love the traditional version of rice and beef stuffed peppers simmering in tomato sauce, I wanted something different and this beef- and grain-free version does not disappoint.

Slow Cooker Italian Turkey Soup

There is only one season where this slow cooker meal would not be welcomed, but for a cold winter day, a brisk fall evening, or a rainy spring afternoon nothing beats a steaming bowl of whole foods goodness chock-full of protein, vibrant Italian flavoring and vitamin rich greens. While the meal stands on its own, you could easily add a crisp salad and artisan rolls for sopping up the broth.

Tuscan Chicken and Tomato Salad

Serve with grilled garlic cheese bread-

This is the perfect tribute to summer’s plentiful tomatoes and fresh herbs. It is light eating during July and August’s sweltering days. I originally prepared this as a “stack” with the salad as a side, but it was so messy to eat that it ended up more as a salad. My family found that this final version is much easier to prepare and eat!

Open-Faced Mushroom and Onion Burgers

Serve with sweet potato steak fries and broccoli slaw-

A bit of a change from a typical burger, an open-faced burger uses only half the bun and you’ll need a fork and knife to eat it. This meal can be made any time of year, but change out your sides depending on the season; i.e., in warmer weather try baked fries, salads and slaws and in the winter try roasted potatoes and root vegetables.
