Pineapple-Cilantro Margarita Protein Smoothie

I took a break one afternoon from having my nose in my laptop and desperately needing to recharge. Fueled myself with this incredibly refeshing, super yummy and uber healthy protein smoothie. It was the last week of Jazz Fest and I was daydreaming about the last time I was at this timeless music fest. Almost as memorable was finding El Gato Negro and their Pineapple-Cilantro Margarita. This is my smoothie verison and you’ll never miss the tequila (well, if it is before 5pm!).

Grilled Salmon with Pineapple Salsa

Serve with coconut rice and tropical coleslaw-

A really fresh piece of Alaskan salmon needs nothing more than a good seafood dry rub and a seasonal salsa on the side. Here I have paired Creole seafood seasoning with a sweet pineapple salsa and some tropical sides for a simply grilled salmon perfect for late spring and summertime dining.

Open-Faced Mushroom and Onion Burgers

Serve with sweet potato steak fries and broccoli slaw-

A bit of a change from a typical burger, an open-faced burger uses only half the bun and you’ll need a fork and knife to eat it. This meal can be made any time of year, but change out your sides depending on the season; i.e., in warmer weather try baked fries, salads and slaws and in the winter try roasted potatoes and root vegetables.
