Butternut Squash Soup with Barley

I am new to experimenting with winter squash soups. I had this mental barrier that they took too long to make and/or would be cumbersome to prepare. Imagine my surprise when I put together this highly nutritious, warming meal together in under 45 minutes. I am now a squash soup convert!

Spring Minestrone Soup

Minestrone soup is one of those classic, year round soups as you incorporate whatever seasonal vegetables are on hand. I love this spring version which includes fresh herbs, green beans, leeks, spinach and, of course, freshly grated parmesan. It’s quick and easy to make; perfect for a mid week dinner.

While there is much Chakra energy going on with this humble soup, there is a powerhouse of Solar Plexus, Root, and Heart Chakra energy which means you’ll feel secure, grounded, confident, empowered and loved with every sip.

Hoppin’ John

Serve with braised collard greens-

“Eat poor that day, eat rich the rest of the year. Rice for riches and peas for peace”. This is a southern saying on eating a dish of Hoppin’ John on New Year’s Day to ensure a prosperous year filled with luck.

This is my quick, vegetarian version (the original Hoppin’ John calls for dried black eyed peas soaked overnight and a ham hock). While I like to make this on New Year’s Day (we all want prosperity and luck for our families, right?), it is also a great dish that I prepare almost year round.

Allow that energy of prosperity and luck to permeate through your energy centers. You’ll activate all of them if you serve southern braised collards along with your Hoppin’ John.

Creamy Corn Chowder

Serve with crusty whole grain bread with goat cheese-

I am not a huge fan of cream-based soups, but I wanted to make traditional corn chowder with the last-of-the-season sweet corn from the farmer’s markets. I am now a HUGE fan of this lightened version, as is my family, which unanimously gave this vegetarian chowder “5 stars”. Dunking a warm, whole grain roll into the incredibly creamy, fennel-scented, flavorful broth (chockfull of tender potatoes and fresh corn kernels) is the perfect beginning to the start of comfort food season.

Taco Casserole

I did not “get” Twitter until I started The Whole Meal and found myself thoroughly absorbed in all things social media. Now Twitter and Instagram have been such great sources of inspiration for me; this recipe being the perfect example.

A Tweet from @MyFitnessPal with a recipe for a taco casserole had me thinking this looks yummy and easy but when I looked at the ingredients it didn’t seem very taco-ish (had black beans and corn in it) so I played around with more traditional taco ingredients and this easy casserole was born; like eating a taco without all the mess and clean up! My family loved it!
