Beef Kefta Flatbread Pizza

Serve with Tomato-Cucumber Salad-

I was flipping through a Cooking Light magazine and came across Beef Kefta Patties with Cucumber Salad. Kefta? A quick internet search yielded my answer: Kefta is the Lebanese/Syrian dialect for Kofta- a Middle Eastern, South Asian and Balkan meatball or meatloaf, although it is also referred to as kefka in Morocco. In the Middle East Kefta is ground beef or lamb, typically mixed with cumin, paprika, minced onion, coriander and parsley. Cinnamon, hot ground pepper, and mint leaves are optional.

The recipe below shows traditional quantities of these spices and herbs. I have, however, sautéed the kefta mixture in favor of forming into kebobs and made it as the base for a flatbread pizza. In honor of its Lebanese roots, serve it with a cooling cucumber-tomato salad.

Poached Salmon with a Creamy Pea Sauce

I have been serving this simple yet elegant salmon entree every Easter, as it is always requested and especially appreciated by the non-meat eaters. The cream sauce is light as the emphasis is on the meaty salmon and fresh seasonal spring vegetables. Include this on your Easter buffet or serve it with herbed roasted potatoes for a special springtime weeknight dinner.

Hawaiian Citrus Blackened Salmon Salad

This recipe is adapted from one of my favorite dishes at Hula Bay in Tampa, Florida. It’s crisp, fresh, and light but hefty in the good omega 3 fats naturally found in salmon. Try making this entrée salad in early spring when the citrus is as its peak and your body is just starting to awaken to the lighter eating that the new season ushers in.
