Butternut Squash Soup with Barley

I am new to experimenting with winter squash soups. I had this mental barrier that they took too long to make and/or would be cumbersome to prepare. Imagine my surprise when I put together this highly nutritious, warming meal together in under 45 minutes. I am now a squash soup convert!

Apples are an abundant and delicious fruit readily available during the fall. They come in so many varieties you could spend the entire season trying them all! Most of us like to eat them raw, stewed, or baked into a pie, but their versatility extends well beyond the obvious uses making their way into savory, dinner dishes. I think this fall salad may inspire you to incorporate apples into your everyday cooking!

Apple Walnut Curried Chicken Salad

Serve in lettuce cup with seasonal fruit and whole grain rolls-

My transition between the gym and early school pick up usually finds me at Rolling Oats Market so I can heal my muscles with this protein-rich chicken salad. This curried version is one of my favorites from this local natural market. I’ve recreated it at home so that I can enjoy any time of the week. I have suggested scooping the salad into a large Bibb lettuce leaf but feel free to stuff it into pita bread or sandwiched between two slices of bread.
