My CSA harvests Kohlrabi in the cool winter months here in Florida and I had no idea what to do with them. Simply Recipes (a great foodie blog) highly recommended a kohlrabi and ham bake. While I thought it sounded delicious, the weather has been cold here this January and I was more in the mood for a soup or stew. Plus I had a bunch of collards I wanted to cook. This was so tasty, as the kohlrabi sweetens slightly and balances the smoky ham. Added bonus: one pot cooking always takes top marks in my book!

    Ingredients
    • 1/2tablespoon olive oil
    • 1tablespoon butter
    • 1 onion, chopped
    • 2 garlic cloves, chopped
    • 3/4pound smoked ham, diced (like Applegate Farm’s petite ham)
    • 1 bunch collard greens, ribs removed and chopped into bite sized pieces
    • 3 kohlrabi, peeled and diced
    • 1cup pearled barley, washed and rinsed
    • 1/2teaspoon sea salt
    • 1/4teaspoon ground black pepper
    • 2tablespoon Fresh parsley, chopped, optional
    Instructions
    1. Heat oil and butter over medium heat in a large stock pot or Dutch oven. Add onions and garlic, sautéing for 1-2 minutes. Add ham and sauté for another minute. Stir in the collard greens and kohlrabi. Pour in 4 cups of water, barley, salt and pepper. Cover and bring to a boil. Reduce heat and simmer for 20 minutes. Stir in parsley if using. Serve in soup bowls.
    Recipe Notes

    For a vegan version, saute onions and garlic in olive oil and eliminate the ham.

    The meat from a smoked turkey leg would work well in this recipe.

    Kohlrabi, also known as German Turnip, is a round, tuberous vegetable in the Brassica family (that also includes cabbage, broccoli, cauliflower, kale, collard greens, and brussels sprouts).  The vegetable is high in vitamin C and contains health-promoting phytochemicals such as isothiocyanates, sulforaphane, and indole-3-carbinol that are supposed to protect against prostate and colon cancers.
