Chicken and Summer Squash with Herbed Yogurt Sauce
I love how this simple chicken dinner comes together in under 20 minutes and features some of summer’s favorite vegetables and herbs with a hint of citrus. It’s delicious “as is” but would be great over pasta or with a loaf of crusty bread.

    Ingredients
    • 1teaspoon olive oil
    • 1 onion, thinly sliced
    • 2 garlic cloves, chopped
    • 1 1/2pound boneless, skinless chicken breast, cut into bite sized pieces
    • 2 summer squash, cut crosswise into thin slices
    • 1 zucchini, cut crosswise into thin slices
    • 1/2teaspoon sea salt
    • 1/4teaspoon ground black pepper
    • 1/4cup plain Greek yogurt
    • 1 sprig fresh rosemary, leaves removed from stem
    • 1 sprig of fresh oregano, leaves removed from stem
    • 3tablespoons freshly squeezed grapefruit juice
    Instructions
    1. Heat the oil over medium-high heat in a large skillet. Add in the onion and garlic and saute for 1 minute until onion is translucent and garlic fragrant. Add in the chicken pieces and brown for 5 minutes, turning once. Add in the summer squash and zucchini and saute all the ingredients together for 5 minutes until squashes are tender and chicken cooked through. Season with salt and pepper. Reduce heat to medium and add in the Greek yogurt, stirring to combine. If the mixture seems too thick add a tablespoon of water at a time until desired consistency. Stir in the fresh rosemary, oregano, and grapefruit juice. Remove from heat and serve immediately.
    Recipe Notes

    If you feel a need for a carb try serving over penne pasta or rice. You could also serve a loaf of crusty bread with it too.
