Chicken Sausage Nuggets
Serve with homemade chunky apple sauce and sautéed cabbage- This is my new "go to" breakfast, lunch, or dinner budget meal. It is amazing that the humble ground chicken can actually taste like breakfast chicken sausage and it has so few ingredients and simple preparation.

    Ingredients
    • 1pound dark meat ground chicken
    • 1 large granny smith apple, peeled and diced
    • 2teaspoon poultry seasoning
    • 1teaspoon sea salt
    • 1/4teaspoon ground black pepper
    • 6 apples, cored, peeled and chopped (any kind will do, but I am partial to granny smith)
    • 1/2teaspoon ground cinnamon
    • 1 head green cabbage, chopped
    • 1tablespoon olive or coconut oil
    • 3 small tomatoes, diced
    • 2 garlic cloves, chopped
    • 1/2teaspoon sea salt
    • 1/4 teaspoon ground black pepper
    • Fresh parsley, chopped, optional
    Instructions
    1. Preheat oven to 375 degrees F.
    2. In a large bowl, combine the ground chicken and the following 4 ingredients (through black pepper). Roll into 1-inch balls.
    3. Cover a broiling pan or baking sheet with sides with tin foil and lightly oil it. Place the chicken sausage nuggets on the baking sheet and bake for 15 minutes until lightly browned, careful not to overcook, as they will be dry. Serve with applesauce and sautéed cabbage.
    4. While the nuggets bake prepare the applesauce: Place 1/2 cup water, the apples and cinnamon in a medium saucepan and bring to a boil. Reduce heat to simmer and cover with lid. Simmer apples for about 15-20 minutes or until soft. Remove from heat and mash with fork or potato masher for chunkier applesauce, or put in a food processor or blender for smoother texture. Set aside until ready to serve.
    5. Prepare the cabbage: Heat a large skillet on medium heat and add olive oil. When oil is hot, add cabbage and sauté for 2-3 minutes. Add diced tomatoes and the following 3 ingredients (through black pepper). Stir and cook another 2-3 minutes (cabbage should be tender). Transfer to a serving bowl and toss with chopped parsley. Cover to keep warm and set aside until ready to serve.
    Recipe Notes

    You can substitute ground sage for the poultry seasoning.

    It's fun and easy to make your own applesauce in the fall when the apples are in season. It's especially fun for kids and adults alike to dunk the savory sausage nuggets in the sweet applesauce.

    My daughter loves for me to make warm apple slices in the morning during fall and winter. I took my basic recipe and mashed it, but if you prefer a sweeter version, stir in a tablespoon or two of agave syrup while cooking.
