When I was exploring eating raw foods for the first time over a decade ago Ani Pho’s recipes were so inspirational. This is one of my favorite breakfast and snack meals that I have modified slightly. New to raw or needing a new recipe to add to your existing repertoire? This is the must-have one!

    Ingredients
    • 2cups flax seed meal
    • 2tablespoons liquid coconut oil
    • 1/4cup agave syrup
    • 1/4teaspoon sea salt
    • 1/4cup water
    • 2tablespoons dried shredded unsweetened coconut
    • Fresh seasonal fruit
    • Raw walnuts or other nuts
    • Plain Greek or plain unsweetened coconut yogurt
    Instructions
    1. Place the flax meal and the following 5 ingredients in a large bowl and mix well. Form into 6 mini-sized pancakes.
    2. To serve: stack 2 pancakes and top with fruit, nuts and yogurt.
    3. Store remaining pancakes in an airtight container in the fridge.
    Recipe Notes

    You can reduce the agave to a couple tablespoons and use maple syrup or agave syrup as a topping.
