    Ingredients
    • 1/2 bone-in turkey breast (about 2 1/2 pounds)
    • 2 garlic cloves, minced
    • 1 teaspoon dry mustard
    • 1tablespoon fresh thyme, removed from sprig (about 2 sprigs)
    • 1tablespoon fresh sage, minced
    • 1tablespoon fresh rosemary, minced
    • 3/4 teaspoon sea salt
    • 1/2 teaspoon ground black pepper
    • juice of 1/2 lemon
    • 1tablespoon olive oil
    • 1 cup dry white wine
    Instructions
    1. Preheat the oven to 325 degrees F. Place the turkey breast, skin side up, on a rack in a roasting pan.
    2. Combine the garlic and the following 8 ingredients (through olive oil) in a small bowl to make a paste. Loosen the skin from the meat gently with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Pour the wine into the bottom of the roasting pan.
    3. Place roasting pan and rack in the middle of the preheated oven and roast the turkey for 1 hour, 35 minutes until the skin is golden brown and an instant-read thermometer registers 165 degrees F when inserted into the thickest and meatiest areas of the breast (I test in several places.). Check an hour in and if the skin is over-browning, cover the breast loosely with aluminum foil. When the turkey is done, cover with foil and allow it to rest at room temperature for 10 minutes. Slice and serve with the pan juices spooned over the turkey.
