I have made simpler versions of these raw lemon balls once the weather starts to warm up but I decided to energize my original recipe to include some other ingredients that really open you up to feel joy and creative flow in your life. You will feel "blissfully joyful" eating a few of these!

    Ingredients
    • 1cup raw cashews
    • 1 1/4cup unsweetened shredded coconut, divided
    • 1 1/4cup pitted dates
    • 1tablespoon hemp seeds
    • 1tablespoon chia seeds
    • Zest and juice 1 1/2 lemons
    • 1tablespoon coconut oil, melted
    • pinch sea salt
    Instructions
    1. Combine the cashews, 1 cup coconut shreds and the remaining ingredients (through sea salt) in a food processor. Process until well mixed together and the ingredients stick together when you press to form a "dough".
    2. Form the "dough" into 1" balls and roll in the 1/4 cup coconut shreds.
    3. Store in airtight container in the fridge.
    Recipe Notes

    I like to serve the truffles cold as they firm up a bit but it's hard to resist eating 1 or 2 while you are rolling them.

    If you'd like to simplify the recipe you can take it down to just the cashews, shredded coconut, lemon juice and zest, dates and a pinch of sea salt. You'll still have all the lemony-coconut goodness if you find yourself with no coconut oil and/or hemp and chia seeds in the house.
