- 1cup raw cashews
- 1 1/4cup unsweetened shredded coconut, divided
- 1 1/4cup pitted dates
- 1tablespoon hemp seeds
- 1tablespoon chia seeds
- Zest and juice 1 1/2 lemons
- 1tablespoon coconut oil, melted
- pinch sea salt
I like to serve the truffles cold as they firm up a bit but it's hard to resist eating 1 or 2 while you are rolling them.
If you'd like to simplify the recipe you can take it down to just the cashews, shredded coconut, lemon juice and zest, dates and a pinch of sea salt. You'll still have all the lemony-coconut goodness if you find yourself with no coconut oil and/or hemp and chia seeds in the house.
