Nutella Banana Bread Muffins
A bunch of really ripe bananas led me to create this easy muffin recipe that tastes just like banana bread with a creamy chocolate surprise in the center. A favorite breakfast, after school snack or pre-work out , these moist, healthy muffins will have you leaving bananas laying around to ripen extra long on a regular basis.

    Ingredients
    • 1 1/2cup spelt, whole wheat pastry, or whole wheat flour
    • 1teaspoon baking soda
    • 1/2teaspoon baking powder
    • 1/2teaspoon sea salt
    • 2teaspoon ground cinnamon
    • 1/2cup unrefined sugar (like erythitol) or brown sugar
    • 2 large eggs
    • 1/4cup honey
    • 3tablespoon coconut or grape seed oil
    • 1teaspoon vanilla extract
    • 4 very ripe bananas, mashed
    • 1/2cup Nutella or chocolate hazelnut butter
    Instructions
    1. Preheat oven to 350 degrees F. Line 12 muffin tins with liners or lightly greased them.
    2. In a large mixing bowl, whisk together the flour and following 5 ingredients (through sugar).
    3. In another medium-sized bowl, lightly beat the eggs. Whisk in the honey and following 3 ingredients (through mashed bananas).
    4. Fold in the wet ingredients to the dry mix, but just until combined.
    5. Spoon about ¼ cup of the batter into each liner. Drop about 1 tablespoon of Nutella in the center of the batter and then fill the liners with the remaining batter. Add another ½ teaspoon of Nutella to the top and swirl around with toothpick or sharp pointed knife. If the Nutella is too thick, you can place some in a bowl and microwave it for a few seconds until it’s a little melted.
    6. Bake for about 18 – 22 minutes or until a toothpick comes out clean.
    Recipe Notes

    If you do not have Nutella you could substitute a creamy peanut butter for the chocolate hazelnut spread.
