Raw Banana Trifle
I am not much of a baker but I love to make easy, simple raw treats and desserts, which are a healthier way to satisfy that sweet tooth anyway. Here is one of my favorites that can be made year round. Raw foods tend to be dense and this recipe is no exception which means smaller portion sizes are very satisfying.
Ingredients
Banana Layer
- 10 bananas, peeled; 2 bananas, sliced; divided
- 2-3tablespoons agave syrup or honey
- 2tablespoons coconut oil
Cashew Layer
- 2 1/2cups raw cashews
- 1 cup pitted dates
Cinnamon Layer
- 1/2 cup unsweetened cocoa powder
- 2 tablespoons coconut date sugar
- 1 1/2tablespoons ground cinnamon
Instructions
- To prepare the banana layer: mash 8 bananas with a fork in a mixing bowl. Stir in the agave syrup and coconut oil. Set aside.
- To prepare the cashew layer: Blend the cashews and the dates in a food processor or blender until well combined. Set aside.
- To prepare the cinnamon layer: Combine all the ingredients in a small bowl. Set aside.
- To assemble the trifle: In a trifle bowl or individual parfait glasses, spread 1/3 of the cashew layer on the bottom. Spoon 1/3 of the banana layer on top of the cashew layer careful to not mix the two layer together. Sprinkle 1/3 of the cinnamon layer on top of the banana layer. Repeat the layers one more time ending with the cinnamon topping. Top with the banana slices. Cover and refrigerate for 2 hours.
Recipe Notes
Do not prepare this trifle too far in advance (definitely not overnight) as the banana loses its flavor and will produce an off taste as well as it will be too mushy.
