I created this soup for my good friend and astrologer, Karen Q., for her astrology event where she wanted a fun, dreamy food pairing inspiring imagination and dreaming. This simple, chilled, sweet treat unexpectedly in the form of a soup surely fit the criteria but just make it in the spring or summer when fresh strawberries are in season as this soup highlights this favorite berry’s beautiful color and sweetness we all love. It’s truly refreshing and delightful!

Ingredients
  • 2cups coconut milk (refrigerated)
  • 1/2-3/4cup orange juice
  • 4cups hulled strawberries, 4 extra, sliced, for garnish
  • 1teaspoon vanilla extract
  • 4-6 mint leaves
Instructions
  1. Put all of the ingredients in a blender or food processor. Transfer to a container that can be put in the refrigerator, cover and chill at least 4 hours, preferably overnight. Serve in individual bowls garnished with a slice of strawberry and a fresh mint leaf or two.
Recipe Notes

I love that this so creamy without any dairy (and vegan) but you could substitute plain whole milk Greek yogurt in place of the coconut milk for a dairy version and a little tang.
