    Ingredients
    • 2teaspoon coconut or olive oil
    • 1 1/2pound boneless, skinless chicken breasts, cut into bite size pieces
    • 1cup chicken broth
    • 1 (20-ounce) can pineapple chunks in juice, undrained
    • 1/4cup apple cider vinegar
    • 2tablespoon brown sugar or coconut date sugar
    • 2teaspoon soy sauce
    • 1 garlic clove, chopped
    • 3tablespoon cornstarch
    • 2 green onions, trimmed and chopped
    • Hot cooked rice
    Instructions
    1. Heat the oil in a large skillet over medium-high heat. Add the chicken pieces and brown for 2-3 minutes. Transfer the browned chicken pieces to a large slow cooker.
    2. In a medium bowl, combine the chicken broth and the following 6 ingredients (through cornstarch) making sure the cornstarch dissolves completely. Pour the sauce over the chicken.
    3. Cover and cook on HIGH 3-3 1/2 hours.
    4. Serve over hot rice with a sprinkle of green onion.
    Recipe Notes

    You can use 2 cups of fresh pineapple chunks in place of the canned.

    Turkey tenderloin would work just as well in this recipe.
