Slow Cooker Cilantro Lime Chicken
This is a super easy slow cooker recipe and a staple in my house. What I love most is the hint of lime and unexpected flavor imparted from the cilantro. Most recipes call for taco seasoning but my version uses only cumin for a more subtle south-of-the-border influence.

    Ingredients
    • 1 1/2pound boneless, skinless chicken breast
    • Juice of 4 limes, divided
    • 2cup cilantro, chopped, divided
    • 2teaspoon ground cumin
    • 1teaspoon sea salt
    • 1/4teaspoon black ground pepper
    • 2teaspoon dried minced onion
    Instructions
    1. Pour the 1/4 cup water into the slow cooker. Place chicken breasts on top of the water. Add the juice of 3 limes, 1 cup chopped cilantro and the following 4 ingredients (through dried onion)on top of the chicken .
    2. Cover and cook on LOW for 6-7 hours or on HIGH 3 ยฝ - 4 hours. Remove lid, shred chicken in slow cooker, and add juice of 1 lime and 1 cup chopped cilantro. Combine well and season with additional salt and pepper, as needed.
    Recipe Notes

    Serve as a filling for tacos, burritos, quesadillas, or on top of rice or a salad.

    Suggested condiments: plain Greek yogurt, shredded Mexican cheese, avocado, chopped tomatoes, hot sauce.

    Using dried minced onions is my secret cheat to this recipe, eliminating the need to sautรฉ fresh diced onions prior to assembling in the slow cooker.
