I like to make this along with our Friday night pizzas. The meatballs add a nice dose of protein and when paired with a crisp salad and a small slice of pizza make for a very satisfying lower-carb meal.

    Ingredients
    • 1 1/2pound ground beef
    • 1/4cup fresh parsley, chopped
    • 1 1/4cup Italian seasoned bread crumbs
    • 2 garlic cloves, minced
    • 3/4teaspoon sea salt, divided
    • 1/2teaspoon ground black pepper, divided
    • 1 medium yellow onion, chopped, divided
    • 1 egg, beaten
    • 1 (28 ounce) jar spaghetti sauce
    • 1 (16 ounce) can crushed tomatoes
    • 1 (14.25 ounce) can tomato puree
    • 1teaspoon dried oregano
    • 1teaspoon dried basil
    Instructions
    1. In a bowl, mix the ground beef, bread crumbs, parsley, garlic, salt, pepper, ½ of the chopped onion, and egg. Shape the mixture into 1”-2” meatballs.
    2. In a large slow cooker, mix the spaghetti sauce, crushed tomatoes, and tomato puree. Add in ½ of the chopped onion, salt, pepper, oregano and dried basil. Place the meatballs into the sauce mixture. Cook on LOW for 6 to 8 hours.
    Recipe Notes

    It’s easy to make your own seasoned bread crumbs with the stale ends of loaves of bread. Here is a recipe:

    Homemade seasoned bread crumbs
    (makes 1 cup breadcrumbs)

    2 slices stale whole wheat bread, torn into chunks
    1 teaspoon dried oregano
    1 teaspoon dried basil
    1 teaspoon garlic powder
    1/8-¼ teaspoon sea salt
    1/8-¼ teaspoon black pepper

    Place the bread chunks, the oregano and remaining ingredients in a food processor or blender. Process until finely ground. Use immediately or store in an airtight container in the refrigerator.

    You can freeze the meatballs and sauce for a quick anytime spaghetti and meatball, or meatball sandwich dinner.
