Slow Cooker Lentils
Although I usually think of lentils for fall or winter, this slow cooker version is also warm weather friendly, especially topped with cooling yogurt. I developed this when one morning I looked in my pantry for something to put in my slow cooker and found a bag of brown lentils. Bingo!

    Ingredients
    • 2cup dried brown lentils
    • 1 onion, chopped
    • 2 carrots, chopped
    • 2 celery stalks, chopped
    • 1 yellow bell pepper, chopped
    • 2cup tomato sauce
    • 1 1/2teaspoon sea salt
    • 1/2teaspoon ground black pepper
    • 2 bay leaves
    • 2teaspoon dried thyme
    • hot sauce or vinegar, optional condiment
    • 1cup plain Greek yogurt, optional condiment
    • 2 green onions, chopped, optional condiment
    • 1/2cup fresh cilantro, chopped, optional condiment
    Instructions
    1. Combine all the ingredients(except condiments)and 3 cups of water in a 4 qt.large slow cooker. Cover and cook on LOW 5 hours or until lentils are tender.
    2. Serve lentils over hot cooked brown rice or cornbread. Garnish with suggested condiments, if desired (I highly recommend).
    Recipe Notes

    Condiments: hot sauce or vinegar, plain Greek yogurt, green onion or cilantro (these will print on shopping list) Your favorite seasonal green veggie would be the perfect accompaniment to this meal. Lightly steaming vegetables is fast and provides a healthy side to the lentils. They'll be ready by the time someone sets the table.
