I had intended to make oven-baked parmesan chicken one night, but realized that I would be out all day, returning with limited time to make this classic Italian dish. I experimented with my slow cooker and the result was surprisingly good! How nice to come home to a favorite Italian meal, where all I needed to do was boil some pasta and toss together a quick green salad.

    Ingredients
    • 1/2tablespoon olive oil
    • 1 egg, beaten
    • 1/2cup bread crumbs
    • 1/4cup Parmesan cheese
    • 1teaspoon garlic powder
    • 1teaspoon dried basil
    • 1/2teaspoon sea salt
    • 1/4teaspoon ground black pepper
    • 6 boneless, skinless chicken breasts
    • 8ounce fresh mozzarella cheese, sliced into 4-6 slices
    • 1 jar marinara sauce
    Instructions
    1. Coat the bottom of a large crock pot with the oil.
    2. Place the beaten egg in a shallow bowl.
    3. Combine the bread crumbs and the following 5 ingredients (through ground black pepper) in a shallow bowl that can accommodate the chicken breasts.
    4. Dip the chicken breasts in the egg and then dredge in the bread crumb mixture. Place the coated breasts in the crock pot, top each with a slice of mozzarella cheese and carefully pour the sauce over the entire contents.
    5. Cover and cook on HIGH for 2-3 hours or on LOW for 4-6 hours.

    Super easy to make this gluten-free by using gluten-free bread, which you make into your own breadcrumbs, or purchase gluten-free breadcrumbs.
