Quick and easy pulled pork sandwiches are the perfect come home to meal on those really busy weeknights. Itโ€™s as easy as adding a heap of store bought coleslaw (my favorite is Whole Foods) on top of this vinegar-based BBQ or put out some baby carrots and celery sticks for a fast veggie side.

    Ingredients
    • 1 (3- to 5-pound) pork shoulder roast
    • 3/4cup cider vinegar
    • 2tablespoon honey, agave syrup, or brown sugar
    • 3/4teaspoon sea salt
    • 1/2teaspoon crushed red pepper
    • 1/4teaspoon ground black pepper
    • Homemade or store bought coleslaw, optional
    • BBQ sauce, optional
    Instructions
    1. Place roast in large slow cooker. In a small bowl combine the cider vinegar and the next 4 ingredients (through black pepper). Pour over roast.
    2. Cook on low for 10 hours or on high for 5-6 hours.
    3. Transfer roast to a cutting board or large glass bowl, reserving cooking juices. When cool enough to handle, shred the meat with two forks into bite size pieces. I found the juice to be fatty, so use a fat separator to retain some of the juice and use this to moisten the shredded pork, enough to add the vinegar flavor, but not too much that itโ€™ll be dripping off the buns.

    Serve on a roll and top with coleslaw and BBQ sauce, if using.
