Slow Cooker Red Beans and Rice
This is one our favorite slow cooker recipes (and its vegetarian!). It’s great on its own, but can be the base for taco salads, burritos, tacos, or as a side dish to a grilled meat. I cook my rice in a rice cooker 40 minutes before we are set to eat. If I know I will be out right up ‘til dinner time, then I make it at the same time as when I prepare the beans, only needing to heat it up at mealtime. You will have extras- perfect for lunch the next day!

    Ingredients
    • 1pound dried red beans
    • 1 onion, chopped
    • 3 garlic clove, chopped
    • 1 1/2cup celery, chopped
    • 1 red bell pepper, chopped
    • 1tablespoon creole seasoning
    • 2teaspoon sea salt
    • 3cup cooked brown rice
    • hot sauce, optional condiment
    • 1 green onion, chopped, optional condiment
    Instructions
    1. Combine beans and next 6 ingredients (through sea salt) in a large slow cooker. Add 6 cups water. Cover and cook on HIGH 7 hours or until beans are tender.
    2. Serve red bean mixture over hot cooked brown rice. Garnish with condiments, if desired (I highly recommend).
    Recipe Notes

    Condiments: hot sauce, chopped green onions(condiments will print on shopping list).

    A variation on this would be to add thinly smoked chicken or turkey sausage into the mixture and cook as directed.

    Your favorite seasonal green veggie would be the perfect accompaniment to this meal.
