I love seafood and I love my slow cooker but it's not always easy to marry the two! So when I find a tasty and easy seafood-based slow cooker recipe you know I just have to share!

    Ingredients
    • 1/2tablespoon olive or coconut oil
    • 1 onion, chopped
    • 1 garlic clove, chopped
    • 1teaspoon dried oregano
    • 1/4teaspoon ground cinnamon
    • 1/8teaspoon ground cloves
    • 1 jalapeno pepper, seeds and membrane removed, finely chopped
    • 1 (28-ounce) can chopped tomatoes
    • 1/2cup clam juice
    • 1 1/2pound red snapper fillets, cut in half and into thin strips
    • 2tablespoon lemon juice
    • 1tablespoon capers
    • 1cup pimento-stuffed olives, cut in half
    Instructions
    1. Heat the oil in a skillet over medium heat and cook onions and garlic sauting until onions are softened and garlic is fragrant. Add the oregano and the following 3 ingredients (through jalapeno peppers) and cook, stirring, for one minute.
    2. Place the vegetable mixture in a large slow cooker. Add in the tomatoes and clam juice.
    3. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
    4. Stir in the sliced fish and following 3 ingredients (through olives). Cover and cook on High for 20 minutes or until fish is cooked through.
    5. Serve with warm tortillas or cooked rice.
    Recipe Notes

    Any firm white fish would work well in this recipe.

    If you are pressed for time you can skip the sauting the onions, garlic and jalapenos in the spices and just place all these ingredients in the slow cooker with the tomatoes and clam juice.

    Along with tortillas or rice, a side vegetable or side salad is all you need to complete this yummy seafood dinner.
