Slow Cooker Split Pea Soup
I really like this version of split pea soup because it’s brothy, rather than thick like a stew. Artisan rolls or slices of bread with a pat of creamy butter are a must for dipping in the filling soup. I usually serve a simple side salad of romaine mixed with escarole (or other bitter lettuce) and shredded carrots in a mustard vinaigrette.

    Ingredients
    • 1/2tablespoon canola or grape seed oil
    • 1 onion, chopped
    • 2 celery stalks, chopped
    • 2 garlic cloves, chopped
    • 3 carrots, peeled and cut into ½ “pieces
    • 1pound green split peas, rinsed and sorted
    • 2 bay leaves
    • 1 1/2cup cooked ham, diced
    • 3cup water
    • 2cup chicken broth
    Instructions
    1. Heat oil in a large skillet over medium-high heat. Sauté the onions and following 3 ingredients (through carrots) until onions are soft and translucent. Set aside.
    2. Place the vegetable mixture in the bottom of a large crock pot. Follow with the split peas. Top with bay leaves and ham. Carefully add the chicken broth and water, so as not to disturb the layering of the other ingredients.
    3. Cover with a lid and cook over low for 8-10 hours or high for 4-5 hours.
    Recipe Notes

    You could easily make this vegetarian by eliminating the ham and using vegetable stock instead of chicken stock.
