Slow Cooker Stuffed Cabbage Roll Casserole
This is a super easy version of stuffed cabbage as there is no stuffing and rolling; only layering! The taste that we love about stuffed cabbage rolls, however, stays the same.

    Ingredients
    • 1 (14.5-ounce) can chopped tomatoes
    • 2tablespoon honey
    • 1 head of cabbage, leaves kept whole
    • 1pound lean ground beef
    • 1cup cooked brown rice
    • 1 egg
    • 1teaspoon sea salt
    • 1/2teaspoon ground black pepper
    • 1 (28-ounce) can tomato sauce
    • 3/4teaspoon garlic powder, divided
    • 3/4teaspoon smoked paprika, divided
    • 1/4teaspoon allspice, divided
    Instructions
    1. Place chopped tomatoes in the bottom of a large crock pot.
    2. Sprinkle honey over tomatoes. Place 2-4 cabbage leaves on top of tomatoes (Try to keep the leaves whole by cutting them off as close to stem as possible).
    3. Mix ground beef and next 4 ingredients (through black pepper) in a bowl and mix thoroughly.
    4. Spread about 1/2 cup meat mixture over cabbage leaves, and follow with ¼-1/3 cup tomato sauce. Season with a small amount of salt and pepper, ¼ teaspoon garlic powder, ¼ teaspoon smoked paprika and a pinch of allspice. Continue to layer these same ingredients ending with a final layer of tomato sauce.
    5. Cover and cook on LOW for 6-8 hours, or on HIGH for about 4 hours.

    *I tend to use whatever grain is either in my pantry or leftover in my rice cooker; i.e., barley, white rice, quinoa, spelt groats.

    You can use ground turkey if you are watching your red meat intake.

    I love that this is one pot cooking, but you could easily add a raw salad to this meal for additional greens.
