Slow Cooker Sweet Soy Braised Chicken Thighs
I am always testing Asian-inspired chicken recipes in the slow cooker but had yet to find one that stood out. I am a big fan of the podcast The Splendid Table with Lynn Rosetta-Casper. She also has great cookbooks and this recipe is adapted from a slow roasted chicken recipe found in her cookbook, The Splendid Table’s How to Eat Supper. It is very family-friendly receiving two thumbs up from my girls and I think the secret is taking some of the liquid and reducing it in a skillet as the sauce to be served with the chicken. I typically serve this with jasmine rice and steamed bok choy.

    Ingredients
    • 8 boneless, skinless chicken thighs *
    • 3tablespoons soy sauce
    • 3tablespoons brown sugar or agave syrup
    • 6 garlic cloves, minced
    • 2tablespoons apple cider vinegar
    • 2tablespoons balsamic vinegar
    • 1tablespoon sriracha (spicy Thai chili sauce)
    • 1/2teaspoon ground black pepper
    Instructions
    1. Place the chicken thighs in the bottom of a large slow cooker. In a small bowl whisk the soy sauce and the remaining ingredients until combined. Pour over chicken thighs making sure all are coated.
    2. Cover with lid and cook on LOW for 4-5 hours or HIGH for 2.5-3 hours.
    3. Remove 1 ½-2 cups of the liquid to a skillet and bring to a boil. Reduce heat to medium, skim off some of the fat and simmer for about 10 minutes until sauce is reduced by half (this intensifies the flavors of the sauce). Place chicken on a serving platter and pour half of the sauce over the chicken thighs (reserve the rest to be served over rice and vegetables, if serving).
    Recipe Notes

    * Many cuts of chicken work well in this recipe such as chicken breasts- bone-in or boneless, drumsticks, or an assortment of chicken pieces.

    I use Braggs Liquid Aminos in place of soy sauce. It is wheat free so it does not include gluten.

    My favorite sriracha is from the Thai Kitchen line of Asian condiments. Their products are usually gluten-, preservative-, and high fructose corn syrup-free. Trader Joe's makes a similar one as well.
