Sweet Potato and Ground Beef Burrito
Serve with seasonal fresh fruit- When I make a skillet ground beef meal I usually serve the mixture over rice or quinoa but since this had a Mexican flavor to it I decided to wrap it in a flour tortilla. This burrito was delicious and got 2 thumbs up from the family.

    Ingredients
    • 1/2tablespoon olive or coconut oil
    • 1 onion, chopped
    • 1 large sweet potato, diced
    • 1pound ground beef
    • 1/4teaspoon cayenne pepper
    • 1teaspoon dried oregano
    • 1teaspoon ground cumin
    • 1/2teaspoon sea salt
    • 1/4teaspoon garlic powder
    • 1/8teaspoon ground black pepper
    • 1teaspoon paprika
    • 1/2cup fresh cilantro, chopped, divided
    • 5 flour tortillas
    • 1cup plain Greek yogurt or sour cream
    • Seasonal fruit
    Instructions
    1. Heat the oil in a large skillet over medium-high heat and saute the onions for 1 minute until onions are translucent. Add in the diced sweet potatoes and continue to cook for an additional minute or two. Mix in the ground beef and the following spice mix ingredients (cayenne pepper through paprika). Mix well, add in a 1/4 cup of water, cover skillet with a lid and cook on medium heat for 10-12 minutes until sweet potato are tender but not mushy. Remove lid and stir in a 1/4 cup of chopped cilantro.
    2. To serve, spoon sweet potato and ground beef mixture into flour tortillas. Top mixture with Greek yogurt and remaining 1/4 cup of cilantro before folding up and serving with a side of fresh, seasonal fruit.
    Recipe Notes

    If you would prefer, substitute a taco seasoning for the seasoning spices in the recipe.
