Tuscan Chicken and Tomato Salad
Serve with grilled garlic cheese bread-This is the perfect tribute to summerโ€™s plentiful tomatoes and fresh herbs. It is light eating during July and Augustโ€™s sweltering days. I originally prepared this as a โ€œstackโ€ with the salad as a side, but it was so messy to eat that it ended up more as a salad. My family found that this final version is much easier to prepare and eat!

    Ingredients
    • 1 bag mixed greens
    • 1/2 rotisserie chicken, shredded (discard skin and bones)
    • 3 large tomatoes, chopped
    • 1/2cup crumbled feta cheese
    • 14 fresh basil leaves, thinly sliced
    • 4 fresh parsley sprigs, coarsely chopped
    • 1tablespooon red onion, finely chopped
    • 1/3cup extra-virgin olive oil
    • 1/2teaspoon Italian seasoning
    • 2tablespoon balsamic vinegar
    • 1/4teaspoon ground black pepper
    • 1/4teaspoon sea salt
    • 2tablespoons extra-virgin olive oil
    • 2 garlic cloves, chopped
    • 1/4cup garlic cloves, chopped
    • 1 small whole wheat or whole grain baguette
    Instructions
    1. Arrange mixed greens on a serving platter.
    2. In a medium bowl, gently combine chicken, tomato, feta cheese, and basil. Place chicken mixture over the greens.
    3. Whisk the parsley and the next 6 ingredients (through sea salt) in a small bowl until combined.
    4. Drizzle the dressing over salad and chicken mixture
    5. Heat grill to medium heat. While grill heats up, combine olive oil, garlic and parmesan cheese in a small bowl. Slice baguette lengthwise. Spread olive oil mixture evenly over cut sides of bread. Grill covered for 5 minutes until golden brown and crispy. Serve with Tuscan Chicken and Tomato Salad.
