Quinoa Tabbouleh with Chickpeas

Tabbouleh is such a quick, easy Lebanese dish that incorporates so many good things; heart healthy olive oil, crisp vegetables and healing herbs. I have always incorporated some chickpeas into the dish for additional protein. Once I discovered quinoa, the ancient seed was an easy substitute for me, as quinoa is wheat-free and does not result in any insulin spikes for me. I like to add a green leafy vegetable to the salad (in this case arugula) so it becomes one dish eating.

Slow Cooker Layered Vegetable Casserole

This was a surprise hit as the main course; the veggies were flavorful but it was the cheese that took it over the top for us. Seasonably adaptable depending on what vegetables are at your farmer’s market or grocer. Try this a side to your meat entrees.

Slow Cooker Tuscan White Beans

This is an extremely versatile bean dish. I have served this as a main meal over brown rice with lots of veggie sides and as a side dish to grilled meats. The leftovers are perfect for using in Wild Rice and White Bean Stuffed Tomatoes (see The Whole Meal for the recipe). The mashed garlic really adds unique flavor (as well as being great for cardiovascular and immune health).

Chocolate Chip Zucchini Bread

Something about the start of fall (even if it is 90 degrees) has me trying all kinds of quick breads. As you know I am not much of a baker and quick breads are very forgiving and easy. While banana bread is my good ‘ole standby (as I always have ripe bananas lying around), I wanted to try my hand at a gluten-free version of a popular end-of-summer, early fall favorite- zucchini bread (when we are all trying to use up the abundance of zucchini in our gardens). Two thumbs up from family and friends and they did not even miss the wheat flour or refined sugar.

Taco Casserole

I did not “get” Twitter until I started The Whole Meal and found myself thoroughly absorbed in all things social media. Now Twitter and Instagram have been such great sources of inspiration for me; this recipe being the perfect example.

A Tweet from @MyFitnessPal with a recipe for a taco casserole had me thinking this looks yummy and easy but when I looked at the ingredients it didn’t seem very taco-ish (had black beans and corn in it) so I played around with more traditional taco ingredients and this easy casserole was born; like eating a taco without all the mess and clean up! My family loved it!
