Mexican Margarita Cookies

I adapted The Whole Meal’s popular and healthy raw Cinnamon Raisin Cookies for my friend, Kari L., for her Cinco De Mayo get together as she wanted to highlight fresh Mexican as well as healthier, in-theme desserts. This was a hit in testing with both kids and adults as it has just the right balance of sweet and salty with a punch of lime.

Nutella Banana Bread Muffins

A bunch of really ripe bananas led me to create this easy muffin recipe that tastes just like banana bread with a creamy chocolate surprise in the center. A favorite breakfast, after school snack or pre-work out , these moist, healthy muffins will have you leaving bananas laying around to ripen extra long on a regular basis.

Slow Cooker Cinnamon Applesauce

When fall rolls around and I see the many varieties of apples at the grocers and farmer’s markets I am ready to make batches and batches of applesauce. Preparing this kid (and adult) favorite in a slow cooker frees you up to go about your business. This a must-have recipe to have this fall.

Fresh Figs Stuffed with Chocolate and Pumpkin Seeds in a Manuka Honey and Red Wine Reduction

This was the grand finale for Mystic Meals Under the Moon’s Full Harvest Moon 4-Course Dinner. The richness of the chocolate and pumpkin seeds were perfectly balanced by the petite size and lightness of fresh figs. Paired with a cinnamon or other fall-spiced hot tea and you have the perfect early fall dessert or snack when figs are in season.

Honey Lime Glazed Steak Kabobs with Summer Melon Kabobs

Serve with Quick Greek Brown Rice

When I think of summer and food, my taste buds immediately crave a simple but flavorful grilled meal. This kabob recipe fits the bill with an easy, slightly sweet marinade for both the steak and summer melons. Dipped in a cool, cumin-scented yogurt sauce and paired with a nutrient-rich brown rice side, this meal cries out for al fresco dining.

Chicken Strawberry Spinach Salad

Serve with whole grain baguette with goat cheese-

This is one of those “out of necessity” dinners that I made when my kitchen was being renovated and I did not have a stove or oven. I couldn’t even access my grill which was right behind the staging area for the workers. It was spring and I knew I wanted to incorporate the juicy, sweet strawberries at their peak this time of year. I got carried away and used them in the salad dressing as well as in the salad. What a great experiment! It’s the strawberry version of the popular raspberry vinaigrette, so expect this salad to be on the sweet side.

Hoisin Glazed Pork Tenderloin

Serve with fennel and red cabbage slaw, brown rice-

This really flavorful and moist grilled pork is one of my favorite summer grilling recipes, especially for an impromptu outdoor get together when you are sick of burgers, dogs and chicken. I have it paired with a fantastic fennel-red cabbage slaw, which came from my friend and The Whole Meal tester Leslee’s repertoire of easy and really fresh sides. Rice is an easy accompaniment, but potatoes salad or even grilled corn are just as delish.

Sweet and Salty Nutter Balls

My husband likes Lara Bar’s Uber bars and one day he brought home a box of “Roasted Nut Rolls”. I liked the name so I flipped to the ingredients and decided I wanted to make a simple version at home. These were a huge hit with my gym friends (great for both pre- and post-workout) as well as a sweet treat, snack or quick, grab-and-go breakfast for my family.

Strawberry-Chia Seed Jam

I adapted my daughter’s blueberry-chia seed jam recipe for this spring fruit favorite with great success.
